Dinner might begin with a signature favorite, Roy’s Original Blackened Ahi – a succulent treat that illustrates completely Roy’s culinary style. Handpicked fresh ahi is blackened with a blend of cayenne, paprika, garlic, onion and chili powder, black pepper and thyme; then seared on a super hot iron grill to instantaneously lock in flavors. Seared but served cold on the inside as sashimi, this spicy appetizer is served with a hot, soy mustard sauce and a traditional French butter reduction called Buerre Blanc. The butter softens the bold intensity of the sauce for a taste that’s a perfect blend of both buttery and spicy.
Another favorite is the Jade Pesto Streamed Opah, which is almost as much a pleasure to see as to eat. Opah tossed in an Asian pesto is given an aromatic steam bath with herbs like lemongrass, kaffir lime leaves, cilantro and ginger that impart a delicate flavor such as found in sticky rice. The combination of steaming and the pesto turns the fish a bright emerald green. It is served with a sizzling soy sauce that is created by slowly steeping to ensure a fully saturated flavor.
And no meal would be complete without trying Roy’s unbelievably irresistible Original Chocolate Soufflé – a rich and warm delight that oozes with chocolate.
