Lyndon brings a wealth of experience to the position. He not only is responsible for the menu at the Luau, but also for the restaurant Aloha Mixed Plate, as well as, the packaged products for Hoaloha brand. This is one busy chef.
Old Lahaina Luau takes great pride in the authenticity of their Hawaiian luau, not just the food portion, but traditional Hawaiian music, cultural dances (hula), and island crafts. Chef Honda has fine-tuned the luau menu by offering new presentation and including selections that are low in carbohydrates, as well as traditional Hawaiian vegetarian options. He has won awards for his Maui Onion Vegan Fantasy; a dish that features caramelized Maui onion, tofu cakes laced with a roasted Maui onion jus, and topped with raw Maui onion poke. Chef Honda has also been featured on the TV show, Tasty & Meatless offering vegetarian style food that even meat-eaters enjoy. Lyndon states, “The expectations of this luau are great, I want to continue to separate us from the rest. I want us to offer something no one else does.” He also is expanding their traditional Hawaiian wedding offerings by adding a sit-down reception package.
Born and raised in Hawaii, Lyndon takes his traditional roots, and blends them with what he learned from attending the Culinary Institute of the Pacific to bring out the best from the diverse cultures you find in the Hawaiian Islands.
Aloha Mixed Plate gives Chef Honda the opportunity to offer you a little from the Japanese like Teriyaki beef and rice, or the Filipino culture such as pork or chicken adobo, from the Koreans we have kalbi or marinated beef ribs, the Chinese get credit for chow fun, and of course, the Hawaiians have roasted pig in an underground “imu” to give us Kalua pig and lau lau. Lyndon has also added breakfast, more salads, and vegetarian dishes to the menu. To say that Chef Honda has his hands full is definitely an understatement.
