Fish caught this morning, fruit and vegetables with five times the flavor, and beef, lamb, and pork grown right on the volcano. It’s hard work to coordinate all the suppliers for every ingredient, but great chefs light up when they see fresh, local, organic food. It’s worth every early morning phone call and every last-minute delivery to create inspired cuisine. Visit I‘o & Capische? — two of our favorite restaurants — to taste what happens when dedicated, talented chefs take advantage of Maui’s bounty.

I‘o Chef James McDonald—a masterful food artist—also owns O‘o Farm, the bio-dynamic, pesticide-free farm in Kula. O‘o supplies exceptional fruit, vegetables and herbs to his three Lahaina restaurants. His fresh fish is delivered by boat directly to his beachside restaurants from the fishermen who caught it, and his beef comes straight from Maui Cattle Company (never frozen).

If you see a truck towing a fishing boat at the Diamond Resort, the fabulous home of Capische?, it’s probably Beamer the fisherman back from the harbor, dropping off his fresh catch of fish for Chef Brian Etheredge. With a strong attention to detail,
Chef Brian and his sous chef, Chris Kulis (both trained by the Culinary Institute of America), have created a foodie haven at the top of Wailea.
