capiche.jpgIf you see a truck towing a fishing boat at the Diamond Resort, the fabulous home of Capische?, it’s probably Beamer the fisherman back from the harbor, dropping off his fresh catch of fish for Chef Brian Etheredge.

With a strong attention to detail, Chef Brian and his sous chef, Chris Kulis (both trained by the Culinary Institute of America), have created a foodie haven at the top of Wailea. The restaurant is filled with romantic warmth, genuine and well-trained service, and exquisitely crafted, creative Northern Italian food. If you listed all the people involved in bringing any given dish to table, it would start with Brian, but also include the nonprofit farmers at Hana Fresh, Kula farmer Michael McCoy, independent fishermen like Beamer, and even Brian’s family tending their backyard garden. Love is delivered to the restaurant daily and soaked, baked and seared into every dish.

Capische? is al fresca dining at its best. On the rail, you get stunning views of West Maui, Lana‘i, Kaho‘olawe and Molokini. If you sit in the sweet-smelling herb garden, the natural stone and quiet breezes embrace you. Most intimate, most romantic.

We’ve had the best fish of our life at Capische?, a piece of opakapaka (pink snapper) poached in olive oil floating in a pool of parsley pesto, topped with a salad of micro greens. The olive oil carefully sealed off the tender flesh and let it blossom into full flavor. We raised our eyebrow at the parsley pestoa—a beautiful bright emerald—but it was fresh, light, and the perfect complement to the snapper.

The ahi bruschetta is perfectly seared tuna on a slice of garlic toast with olives, capers and a decadent truffle aioli. We like to pair it with the beef carpaccio braciola. While there are many winning items on both the appetizer and entrée menus, eating fish at Capische? is always a good choice.
