 Flatbread Pizza Company is packed with planked tables and benches, bar stools, and people enjoying the great pizza made from high quality, organic and local ingredients.
Pa’ia is a haven for the health conscious, but Flatbread isn’t just catering to the local trends. Its firm commitment to sustainability is spelled out in the mission statement, and the staff demonstrates it daily. A member of the Hawai’i Organic Farmers Association, the restaurant’s general manager networks with local farmers and rancher and markets to get the best produce for her pizza makers. Fishermen deliver direct to the store, an upcountry rancher provides organic, grass-fed beef, and local organic farmers know who to call when they have a crop of interesting, tasty produce.
The two daily specials (one vegetarian flatbread, one meat flatbread) tend to showcase the local finds. A good example of this is the recent veggie special, Potato Dream, a dazzling display of thinly sliced, tender blue potato disks layered with vegetables over rosemary cream sauce.
Flatbread’s dough is made using the delicious local Menehune spring water and organic flour they have restored with wheat germ by hand. The thin flatbread bubbles beautifully to a crispy/chewy crust. The sauce is handmade in house with organic tomatoes and local organic herbs. Every topping is organic, and we love the spicy pepperoni and maple-fennel sausage (you won’t miss the nitrates a bit). Local goat cheese from Surfing Goat Dairy tops several pizzas.
The salads are sparklingly fresh, large, topped with carrots, celery, and seaweed and a sometimes-too-bright pineapple vinaigrette. Service is genuine and heartfelt. But the most important thing at Flatbread is the L-O-V-E that comes with your meal. You’ll get the chance to say “Thanks” as the flatbread is delivered with pride, often times, by the person who made your pizza.
