Melting Hot Chocolate Soufflé
Many have imitated Roy Yamaguchi’s Melting Hot Chocolate Soufflé, but few have really mastered the art of creating a boldly chocolate flourless cake that spills its liquid center upon first cut. We still like Roy’s best.
Order the soufflé with your main course. It has to be baked individually and timed perfectly to arrive just out of the oven, so the server needs to let the kitchen staff know you are expecting one. When it arrives, it will look like a chocolate tower bolstered by scoops of creamy vanilla ice cream and plated with swirls of raspberry coulis. A dusting of sugar may brighten it up, but you shouldn’t spend too much time in pointless admiration—with every second that ticks by the volcano effect is lessening.
Take your spoon and pierce the top, then cut straight down to the bone white plate, and make sure your tablemates can see the spectacle. The molten chocolate will ooze out and join the red raspberry, and your spoons should immediately get to work. Make sure a little ice cream is included in your first bite—the soufflé is titled Hot for a reason.
This is an intense experience, and if you have a strong cup of coffee nearby, you just might have a pleasant little “episode.” We have been criticized by readers who say our recommendation to share this dessert is unfair to both parties – so you may want to double your order.

Roy’s Restaurant, in either the Kihei or Kahana locations, while noisy in that exhibition-kitchen way, are an excellent place to invest your dining dollars.
